Hi all,
At my new job x-mas eve day is an eat all day day. Everyone brings in food for breakfast and lunch. So i really want to make the egg back dish that we made for breakfast at the retreat?? I am not sure if Jeannette or Silver Lining was the chef but it was delicious. Anyone else who has an egg type cassserole breakfast dish please share!!Thanks so much,

I didn’t even see the dang thing when it was done cause I was too busy driving to the AIRPORT every 5 minutes, lol! My recipes are packed in one of 50 boxes marked “kitchen”. Let’s see if Jeanette answers you…she SHOULD! If not, I DO have a recipe and I could get it to ya this wknd! Also, there are probably tons available online!! Great to hear from you, girl! It’s been a minute and I have missed you!!

Glad you liked it, I always enjoy it too. It is call a breakfast strata. You can google it and get lots of recipies. I think the recipe I used was from http://www.cooks.com/rec/view/0,165,150186-237203,00.html. The ingredients listed there are typical of most the egg strata’s.It makes a nice breakfast for holidays because you can make it ahead of time.

December 8, 2011 at 9:56 pm #23700joannParticipantThis is my all time favorite, super simple, decadently awesome, tasty breakfast when I have people over.
You can make it ahead of time, throw it in the oven in the morning and enjoy eating breakfast together. You can substitute any kind of breakfast meat you like; sausage, bacon or ham (my fav is ham).
Ingredients
1 pound sliced bacon, sausage or diced ham
1 medium onion, chopped
6 eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups shredded Cheddar cheese
1 1/2 cups small curd cottage cheese
1 1/4 cups shredded Swiss cheeseDirections
In a large skillet, cook bacon, ham or sausage and onion until bacon is crisp or ham or sausage is browned; drain. In a bowl, combine the remaining ingredients; stir in meat mixture.
Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
Bake, uncovered, at 350 degrees F for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting.
Enjoy!
